Discover two exceptional coffees from Ecuador, produced by Pepe Jijon and his son José at the renowned Finca Soledad.

This box set includes two large Comandante Polystre jars, each filled with outstanding coffee:

  • 75 grams of Typica Mejorado Fully Washed from Finca del Putushio, run by José Jijon, cultivated at 2,222 meters above sea level.
    Process method: Coffee cherries, harvested at 22 Brix, are depulped on the same day and fermented for 12 hours before being washed. After processing, the beans are dried on African beds for 30 days, allowing the flavors to develop gradually. This careful process results in a clean and delicate cup that reflects the true character of its origin.

  • 75 grams of Sidra 'Wave' Natural from Finca Soledad, located at 1,515 meters above sea level, crafted by Pepe Jijon.
    Process method: This coffee undergoes a 12-day fermentation using ripe cherries at 22 Brix. The cherries are then slow-dried in a dark room for 40 days, allowing the natural sugars and complex flavors to fully develop. The result is a cup with deep, layered flavors, highlighting the fruit's natural sweetness. Expect a juicy coffee with vibrant tropical flavors.

Finca Soledad is located in Ecuador’s Intag Valley, surrounded by native trees in a biodynamic ecosystem. Managed by mountaineer-turned-coffee-producer Pepe Jijon, the 120-hectare farm dedicates 8 hectares to coffee varieties like Typica Mejorado, Sidra, and Geisha. Despite numerous challenges, Pepe’s dedication to sustainability and nature-driven processing techniques has earned Finca Soledad global recognition in the specialty coffee industry.

Pepe’s journey began after a life-changing accident when he transitioned from climbing the world’s highest peaks to cultivating world-class coffee. Finca Soledad now thrives with a strong commitment to the environment, where Pepe carefully listens to nature to guide his innovative fermentation and drying processes. The farm produces coffees with complex, vibrant profiles, including those featured in World Coffee Competitions.

In addition to Finca Soledad, Pepe recently acquired Finca del Putushio, located at 2,222 meters above sea level, where he plans to expand washed coffee production. Finca del Putushio is now managed by his 19-year-old son, José, who has joined his father in continuing the family’s coffee-growing legacy. José brings fresh energy to the project, learning the intricacies of coffee farming while supporting the mission of producing sustainable, high-quality coffee.
